OLIVE OIL

The origins of olive oil are lost in the mists of time. The first evidence of the use of oil dates back to 4000 BC, in Armenia and Palestine.

It was the Romans who spread the plant throughout the territories of the Empire and who imposed the payment of taxes in the form of olive oil.

With the fall of the Roman Empire, olive cultivation also fell into disgrace.

In the Middle Ages the best lands were recovered for the production of basic cereals and for the cultivation of the olive tree.

In the Renaissance, thanks to the Cistercian and Benedictine abbeys, custodians of plants and herbs, olive growing was saved from abandonment.

Extra virgin olive oil is rich in monounsaturated fatty acids.

These reduce some chronic diseases, reduce the bad HLD cholesterol and increase the good HDL.

Among the many beneficial substances, EVO oil is rich in antioxidants, flavonoids, polyphenols and squalene.
